Cleaning up casserole dish

I have recently made chicken pot pie and because I hate doing to the dishes, this is my short cut.

Line you casserole dish with tin foil and all you have to do is gather foil and put it away. If your foil breaks when serving, this trick make soaking minimal.

Chicken pot pie

When it comes into cooking dinners I find that comfort food is better. I try to plan something that would last two meal because of my husband's demanding night job.

1. One large Onion chopped.
2. 4 large sticks of celery
3. 2 cans of Cream of chicken
4. One can of biscuits
5. two large chicken breast or three cans of chicken breast.
6. One family size of mixed veggies
7. Chicken Stock (optional)

Spices of my choice: Salt, pepper, garlic powder, and Cajun seasoning.

I do like putting in

You can put in what ever filling you like and feel free to adventure into other things. Other people have made similar dishes and this is spin from a betty crocker link that I found but my husband was not a huge fan of the crust. http://www.bettycrocker.com/recipes/easy-chicken-pot-pie/df0d82fa-a1de-4bc6-8952-a4a2533baf75

Cook down Onions, celery, and mixed veggies. Chop chicken and add to the skillet. Spice everything to your liking.  Cook until veggies are tender and chicken is brown. Add 1 cream of chicken. If you think that mix is to think too thick add chicken stock. If you think you don't have enough creamy texture you can add the 2nd can. Do what you feel is right. Cooking is fun if it is on your terms.

Preheat your oven to 350 degrees

Take a casserole dish and line it with tin foil. This is make clean easy. Pour mix on dish and pop open you biscuits. Some people cut them up and some just put them on top of the mixture. If you cut them into squares with cooking scissors they do quick through more or you can put them whole.

Cook as directed on biscuits wrapper.

Have fun. From me to you.

My husband's favorite dish.

My husband loves my fried chicken and gets cranky when he has to share with the other kids.

It was one of the first things that I have ever made him and he says that was on the reason why he loves me so much. It is very simple and nothing that is set in stone.

1. 2 cups flour
2. 2 Tbs baking powder
3. 1 Tbs of garlic power
4. 1 Tbs of BBQ seasoning
5. 1 tsp of salt.
6. Two chicken breast or tenders or thighs.
7. 1 1/2 veggie oil
8. 2 tbs of butter
9. 2 eggs
10. 1/4 milk

Take one deep skillet and put the oil and butter on medium heat.

In one bowl beat eggs and milk together to make a wash, then place chicken pieces in the bowl.

In a second bowl place four, baking powder, and seasoning and mix until well blended.

With one spatula place chicken pieces one of a time into the flour mixture. Toss the chicken until well coated then place each piece pf chicken into the warm oil.

Do not over crowd the pan or the chicken will not cook evenly because the more chicken you put brings down the temperature of the oil. Cook chicken until golden brown on the bottom and then turn.

As you are pulling out the chicken season them with salt or leave alone.

There you go. It's simple and easy just takes a bit of time.

Adding another blog but this time with a mission.

Some of my friends but not all, are asking to me to write down something that I am doing to get myself into the art of writing again. I am going to try slowly and this time with a mission. I am going to be asking questions and hoping getting some answers, I am going to be doing things that I thought were good ideas and see if it works, and I am going to blog about what goes on in the family day to day life. If you have any ideas or questions please log on and comment and I will answer.
