Granny square triangle shawls

                                        Granny Square Triangle Shawl.

This was something that was a lot of fun and actually very easy to make. Forgive me this is the first time writing a pattern.

First you can use any size hook or any type of yarn you would like. I used 4.5 size hook and Love this Yarn Denim Blue.

1. Chain 4 and slip stitch together for a circle. You can use a magic circle if you like.

Row 1. Ch 3 two more dbl crochet making three dbl crochet, chain 2, and the end with three more double crochet.

Row 2. Chain three, in the base of the chain make two double crochet, chain one, three double crochet in the chain two, chain two, then three double crochet making your corner, chain one and in the last double crochet in row one make three double crochet. 

Row three: Ch 3 and in the base make two more double crochet chain one and in the spaces of the previous rows make three double crochet. You will always be using the corner to three double crochet chain two and three double crochet. 

Use this pattern to make the shawl as big as you want.

Enchiladas casserole


Enchiladas is something that my family has been making this for years. The truth is being a kid raised in the back of the a Mexican restaurant you would think that I would make a bunch of Mexican food but I don't. 
You will need a lot. 

One pot: Boil two chicken breast with a packet of fajita seasoning or taco. Then when chicken if fully cooked strain it and leave to rest. 

In the same pot, because I hate doing dishes.

1. One whole onion, chopped.
2. One large can of green chili peppers.
3. Half a cup of your favorite salsa.
4. One large can of Olives.
5. One can of dices tomatoes
6. One large can of Enchilada sauce. Red or Green it does not matter. Save a little bit for the bottom of the casserole dish.
7. As much Garlic as you can stand.
8. Dice or shred the chicken.
9. Shred what ever cheese you would like and how much you like.

In the casserole or you might need something larger because it always over flows when I make it.

*** PUT YOUR CASSEROLE OVER A COOKIE SHEET***PREHEAT OVEN TO 375***

1. Pour the rest of the Enchilada sauce on the bottom.
2. Take corn tortillas and cut them or lay them anyway that you would like on the bottom and along the sides.
3. Take a little cheese and cover the bottom.
4. With a slotted spoon take the filling from the pot into the casserole dish and fill it.
5. Cover with cheese but save cheese too for the top.
6. Then cover the filling with corn tortillas and then the sauce that is left the pot then the cheese.

Cook for about 30-45 minutes.

Have fun with it. Change it if you want. I know some friends of mine put a layer of avocado or use queso fresco but you want to be careful about the salt of you use another cheese.

Pigs in a blanket








My family has always loved me making this and a every holiday, game night, or reunion there is a massive request. It is very easy and not that much to make. 

All you need is two cans of your favorite biscuits and two bags of cocktail wieners.

Open the biscuits and cut each one in thirds.

Wrap each wiener in one of the strips.

Make sure that you wrap the wiener completely, or it will unroll while the wiener is baking. 

Bake as instructed it is on the can and let cool.

Slow cooker potato soup





One of the best things that I have found is how to make a crock-pot potato soup. As I looked it up my heart was screaming. It's not exactly healthy, but can you really put a price of hot soup on a winter day?

Once again spice everything to your liking. Also, keep in mind this is for a family of five. 

It is a great thing to put together, go to work,top with bacon bits and boom dinner.

Spices: Salt, pepper, garlic, bay leaf, and what ever you think will work.

1. One packet of chicken thighs, cooked and chopped.
2. One large onion, roughly chopped
3. One packet of Onion soup mix.
4. 5 sticks of celery.
5. Two frozen Hash browns, what ever kind you like is fine.
6. One can of chicken broth.
7. One bag of frozen corn.
8. One package of cream cheese, room temp.
9. Two cans of cream of chicken.
10. Water

Now, this is how I pile everything in. You put the chicken stock, spices, cream of chicken, thighs, onions soup mix, onions, and then the hash browns. Fill 3/4 of the crock pot. Keep the crock pot on low for about 6 hours. At the last hour, add your room temp cream cheese. Stir until everything is mixed well and done. 

If you want, you can add cheese, bacon and sour cream and it will be just like a baked potato.

Bangers and Mash


My Husband and I love this Irish Pub in our home town. The first time that he took me there I had something called bangers and mash. It is something that was so rich and good the flavors were amazing. 

1. One package of Beer Brawts.
2. One whole Onion coarsely chopped
3. One package of button mushrooms
4. One box of instant potatoes 
5. One beer of your liking
6. 2 table spoons of flour
7. One can of chicken broth or a half a cup of milk

Again use butter, salt, pepper, garlic powder, onion powder and what ever spices you like. Never be afraid to adventure away from this. Cooking is fun.


Take the package of beer brawts, onion and mushrooms in a skillet over medium high heat. The reason why they call this "bangers and mash" is because the sausage casings will start getting this golden brown and it make a banging sound as the casing starts to break open. Make sure all the around the casing get some color, onions will get golden brown, and mushrooms should be closed to cooked through. Pour the beer of your liking into the skillet. Get all the good bits at the bottom, cover and for another 10-15 minutes until sausage cooked through.

Make your instant mash potatoes accordingly.

Remove meat from the skillet and add flour and about the about a table spoon butter. Let everything cook through so there is not a flour taste. Add Either milk if you like white gravy or broth if you like darker gravy.

Enjoy this with the same beer you used to cook.

Cleaning up casserole dish

I have recently made chicken pot pie and because I hate doing to the dishes, this is my short cut.

Line you casserole dish with tin foil and all you have to do is gather foil and put it away. If your foil breaks when serving, this trick make soaking minimal.

When it comes into cooking dinners I find that comfort food is better. I try to plan something that would last two meal because of my husband's demanding night job. 

1. One large Onion chopped.
2. 4 large sticks of celery 
3. 2 cans of Cream of chicken 
4. One can of biscuits
5. two large chicken breast or three cans of chicken breast.
6. One family size of mixed veggies
7. Chicken Stock (optional)

Spices of my choice: Salt, pepper, garlic powder, and Cajun seasoning.

I do like putting in 

You can put in what ever filling you like and feel free to adventure into other things. Cook down Onions, celery, and mixed veggies. Chop chicken and add to the skillet. Spice everything to your liking.  Cook until veggies are tender and chicken is brown. Add 1 cream of chicken. If you think that mix is to think too thick add chicken stock. If you think you don't have enough creamy texture you can add the 2nd can. Do what you feel is right. Cooking is fun if it is on your terms.

Preheat your oven to 350 degrees

Take a casserole dish and line it with tin foil. This is make clean easy. Pour mix on dish and pop open you biscuits. Some people cut them up and some just put them on top of the mixture. If you cut them into squares with cooking scissors they do quick through more or you can put them whole. 

Cook as directed on biscuits wrapper.
